Recipe: Pan Fried King Fish with Garlic Butter Sauce



Ingredients:

King fish (Tanigue) slices
Minced garlic
Unsalted butter
Salt
Pepper
Lemon


Procedure:

1. I-marinate lang ang king fish slices sa lemon, salt and pepper for atleast 30 minutes.

2. Magbrown ng garlic sa butter. Alisin ang garlic, kasama ang butter pag brown na. Lagyan ng 1/4 tsp ng lemon at i-set aside.

3. Sa parehong pan, maglagay ng butter at i-sear ang fish hanggang maging brown ang both sides.

4. Ihain ang fish with the garlic butter sauce sa ibabaw.

Recipe: Dom's Roast Beef with Sweet Corn Gravy

Easter Lunch

Dahil Easter Sunday na pwede na ulit kumain ng karne. Happy Easter Guys!!!


Ingredients:

For roast beef:
Beef (rump cut)
Garlic
Oyster sauce
Lee kum kee's mushroom flavored dark soy sauce
Five spice powder
Olive oil
Salt
Pepper

For the sweet corn gravy:
Sweet corn kernels
Fresh milk
Knorr liquid seasoning
Salt
Pepper
Butter
Beef stock
Cornstarch
Water

Procedure:

For roast beef:

1. I-pat dry ang beef, gumawa ng mga hiwa sa paligid ng beef at lagyan ng garlic.
2. Paghaluin ang 1/2 tsp five spice powder, 1/2 cup of oyster sauce, 1/2 cup of dark soy sauce, konting salt, pepper at 1/4 cup ng olive oil. 
3. I-marinate ang beef for atleast 1 hour (or overnight).
4. Pakuluan ng beef kasama ang marinade at 2 cups of water for around 30 to 45 minutes, depende sa inyo kung gusto nyo ng well done. Kung gusto nyo yung rare or medium rare, skip nyo na lang to.
5. I-roast ang beef sa oven for 45 mins to 1 hour, depende sa gusto nyong luto.
6. Palamigin muna ng konti bago hiwain.


For sweet corn gravy:

1. Paghaluin ng 1 cup fo fresh milk, 1/2 cup of sweet corn kernels, 2 tbsp. of liquid seasoning, 1/4 cup ng stock na pinagpakuluan ng beef, 1/2 cup of water, salt and pepper.
2. Pakuluan over low heat ng gravy at lagyan ng cornstarch na tinunaw sa water.
3. I-add ang butter, tikman at i-adjust ang lasa.

Holy Week 2011

Jesus my Lord, let me strengthen my courage by taking on the courage of all those people who have been "centurions" for me. Many have faced disasters and hard times with great constancy. The upper hand of evil never turned them against you. They kept going. Let me be like them, Lord. No matter what the cross, let me never stop declaring you to be "truly the Son of God, the source of my hope, the reason why I will never quit on life.

Recipe: Brocolli Soup (Version 2)


Another Holy Week food


Ingredients:

Brocolli
Fresh Milk
Cream
Evaporated Milk
Salt
Pepper
Butter


Procedure:

1. I-blend ang brocolli (2 cups) at fresh milk (2 cups) according sa gusto ninyong texture. I made mine smooth, ni blender ko for around 3 minutes.
2. Ilagay ang blended milk and brocolli sa isang thick pot. Ilagay ang cream (1/2 cup), evaporated milk (2 cups) at butter (2 to 3 tbsp). I-simmer sa mahinang apoy for around 5 minutes.
3. I-adjust ang lasa according sa gusto ninyong timpla using salt ang pepper.
4. Ihain kasama ng bread habang mainit pa.

Recipe: Fish Lumpiang Shanghai

Tamang tama itong recipe na ito for Holy Week! Nakaugalian na namin pamilya na hindi kumain ng chicken, pork at beef for one week pag holy week. I'll cook this again para sa pabasa namin sa Maundy Thursday. Have a blessed week guys!!!


Ingredients:

Fish (I used galunggong)
Lumpia wrapper
Garlic
Ginger
Eggs
Cornstarch
Chopped onions
Chopped carrots
Chopped bellpepper
Chopped cabbage
Salt
Pepper
Water
Oil

Procedure:

1. Pakuluan muna ang isda sa isang pot na may tubig, ginger at garlic. Mga 5 minutes lang. Iwasan na madurog yung isda.Palamigin.
2. Himayin ang pinakuluuan na isda, alisin ang mga tinik. Yung laman lang ang kailangan natin.
3. I-combine ang hinimay na isda, chopped onions, chopped carrots, chopped bellpepper, chopped cabbage, 2 eggs, 1/4 cup of cornstarch, salt and pepper. Timplahin according sa panlasa nyo. Hayaan ng atleast 30 minutes.
4. Ibalot sa lumpia wrapper at i-seal. Hayaan ng mga 5 minuto bago iprito.
5. Magpainit ng mantika at iprito ang lumpia hanggang maging golden brown.
6. Magcombine ng ketchup at mayonnaise para sa sawsawan. I-serve habang mainit at malutong pa.

Kahapon ko lang napanood ng buo ito kasi trailer pa lang naiiyak na ako. Mga 5 tabo ng luha ang naubos ko kahapon ng pinanood ko ito. Syempre mag-isa lang ako sa kwarto ko ng pinanood ko ito kasi nga alam ko ng katakot takot na luha ang gagawin ko. Oo cry baby ako. I can't help it, kusang tumutulo na lang ang mga luha sa mata ko.

Recipe: Ilocos' Igado

Isa sa mga paborito kong Ilocano dishes

Ingredients:

Pork cut into thin strips
Pork Liver cut into thin strips
Potatoes cut into strips
Bellpepper cut into strips
Green peas
Soy sauce
Lemon
Achuete
Oil
Garlic
Onion
Pepper
Patis
Water


Procedure:

1. I-marinate ang pork sa 2 tbsp. of lemon, pepper and 3 tbsp. of soy sauce for atleast an hour.
2. I-marinate ang pork liver sa 2 tbsp. of lemon at pepper para mawala ang lansa for atleast an hour.
3. Sa isang kawali, iprito ang liver hangang maluto o matusta yung outer portion ng liver.
4. Isunod ang onion, garlic at pork (wag isama ang marinade pero wag itapon ang marinade). Igisa for 10 minutes.
5. Ilagay ang marinade at lagyan ng 3 cups of water. I-simmer hanggang mag reduce yung water.
6. Timplahan ng using patis at pepper. Ilagay na rin ang achuete pampakulay, around 2 to 3 tbsp. lang.
7. Ilagay ang greenpeas at patatas. I-simmer hanggang maluto.
8. Ilagay ang bellpepper at i-simmer for 3 minutes. Tikman at i-adjust ang lasa.
9. Ihain with rice.
